2 Thomas’ 100% Whole Wheat English Muffin
3 eggs
1 tsp margarine or butter
1 tsp water
1 small red bell pepper, diced
1 small green bell pepper, diced
1 small red onion, diced
Salt and pepper to taste

Directions

Beat eggs and water until an even consistency before adding in pepper and onion. Melt butter or margarine in frying pan over low heat. Pour egg mixture into pan, stirring constantly until fluffy. Remove from heat and plate on toasted Thomas’ 100% Whole Wheat English muffins while still moist to avoid overcooking. Salt and pepper to taste.
