1 roma tomato, chopped
1 tablespoon lemon juice
1 tablespoon garlic olive oil
1 teaspoon salt
½ teaspoon freshly ground black pepper
3 tablespoons Goat cheese
1 tablespoon fresh basil, chopped

Directions

1. Toss together tomato, lemon juice, garlic oil, salt and pepper in a small bowl. Set aside.
2. Toast both halves of English muffin until golden brown.
3. Spread Goat cheese evenly on each half of English muffin.
4. Top with tomato mixture. Enjoy!
