2 tablespoons cream cheese
1 avocado, mashed
1 teaspoon lemon juice
4–5 mini heirloom tomatoes, sliced
Salt and pepper

Directions

1. Spread cream cheese evenly onto each muffin half. In a small bowl, mash avocado with lemon juice until smooth. Layer avocado mixture over cream cheese and top with sliced mini heirloom tomatoes and salt and pepper, to taste.
