Tomatillo, Chorizo Egg Breakfast Bagel

Get kickin’ with this spicy, saucy breakfast sandwich.

Ingredients

1 Thomas’® Onion Bagel, toasted
½ cup chorizo
½ tablespoon butter
1 egg
¼ cup Chihuahua cheese, shredded
1 tablespoon tomatillo salsa

Directions

1. In a small skillet over medium heat, cook the chorizo until it starts to turn a darker red (approximately 4-5 minutes). Set aside.
2. In a second small skillet over medium heat, melt butter. Fry egg until whites are set and yolk is still slightly runny. Turn off the heat, top egg with shredded cheese and cover skillet until cheese melts.
3. Build sandwich. Layer bottom half of toasted bagel with cooked chorizo, cheesy egg and tomatillo salsa. Top with toasted bagel top and enjoy.
