Thanksgiving Leftover English Muffin
Put those Thanksgiving leftovers to use with this delicious gourmet recipe!
1 teaspoon olive oil
1/2 cup Thanksgiving stuffing
1/4 cup cranberries in juice
1/2 avocado, peeled, pitted and cut
2 quail eggs
Pinch of Citrus Salt
3 teaspoons lemon juice
2. In a skillet, add olive oil and set to medium heat. Add stuffing to warm. Add eggs to center of stuffing and heat eggs to “sunny-side up”.
3. Spread avocado mixture onto muffin bottom.
4. Lay watercress on top of avocado.
5. Remove stuffing with eggs from heat and lay on top of watercress. Top with remaining English muffin half.
