Swirl Bread, Brie & Apricot Grilled Cheese

Ingredients

4 slices Thomas’® Cinnamon Swirl Bread
2 apricots, sliced and grilled
2 tablespoons butter
10 slices Brie cheese, thin
4 basil leaves, minced

Directions

1. Heat a grill to medium heat. Place sliced apricots on grill grate and cook, rotating from side to side, until grill marks appear on each side.
2. Spread butter on 1 side of each bread slice. Place 2 slices, butter side down, in a large skillet over medium heat. Arrange 5 slices of Brie on each buttered slice. Top with sliced apricots and minced basil, followed by remaining buttered bread slices, butter side up.
3. Cook grilled cheese until golden brown on bottom. Carefully flip and continue cooking until second side is golden brown.
