Spinach & Goat Cheese English Muffins
Give this vegetarian recipe a try with spinach and red onion!
1 Thomas’® Double Protein Oatmeal English Muffin
1/8 red onion, thinly sliced
1 handful fresh spinach
1 tablespoon goat cheese, crumbled
1 teaspoon Olive Oil
Split Thomas’® English Muffin with a fork and toast. Once toasted, top bottom half with sautéed onion and spinach mixture. Sprinkle goat cheese on mixture and then place English Muffin half on top.
