Spicy Hummus English Muffin Melts
Spice up any meal with this vegetarian treat.
1 tablespoon olive oil
Small handful spinach
2 ounces spicy red pepper hummus
¼ cup Mozzarella cheese
2. Heat olive oil in medium skillet over medium heat. Add spinach and cook until wilted (approximately 2 minutes).
3. Lay wilted spinach on top of each English muffin half.
4. Top with spicy hummus and Mozzarella cheese.
5. Broil until cheese is melted and slightly browned (approximately 2 minutes).
6. Serve warm.
