Slow Cooker Italian Beef

Colder weather calls for comfort foods, and this Slow Cooker Italian Beef is as comforting as it gets.

Ingredients

6 Thomas’® Everything Bagels, toasted
4 pounds of beef roast
8 tablespoons butter
1½ cups beef broth
¼ cup white vinegar
2 tablespoons garlic, minced
2 tablespoons oregano
2 tablespoons parsley, chopped
2 tablespoons red pepper flakes
2 tablespoons basil, chopped
1 bay leaf
2 cups bell pepper, sliced
1 small onion, chopped
Salt & pepper, to taste
6 slices Provolone cheese

Directions

1. In a slow cooker, combine beef, butter, beef broth, vinegar, garlic, oregano, parsley, red pepper flakes, basil, bay leaf, bell pepper, onion and salt and pepper. Cover and cook on high for 4 hours or until tender.
2. Shred the beef with a fork, set the cooker to low and cover until time to serve.
3. Layer each bagel bottom with 1 slice of Provolone cheese and desired amount of shredded beef. Top with bagel lid and enjoy!
