Shrimp, Mango and Avocado Sammie

Can’t make it to the beach? Bring the beach to you with this coastal shrimp sandwich.

Avocado

Ingredients

4 Thomas’® Original English Muffins
1 pound jumbo shrimp, deveined
2 tablespoons lime juice
2 tablespoons cilantro, chopped
½ teaspoon kosher salt
1 teaspoon garlic, minced
1 tablespoon honey
¼ teaspoon red pepper flakes
1 tablespoon olive oil
1 mango, peeled, pitted and diced
¼ cup sweet peppers, diced
Avocado Mash (recipe follows)

Avocado Mash Ingredients:
1 avocado
1 tablespoon cilantro, chopped
1 teaspoon garlic, minced
1 tablespoon lime juice
½ tablespoon kosher salt

Directions

1. Combine lime juice, cilantro, salt, garlic, honey, red pepper flakes and olive oil in a large re-sealable bag. Add shrimp to the bag, seal closed and place in refrigerator to marinate for at least 30 minutes (maximum time of 3 hours). While shrimp is marinating, soak bamboo skewers in cold water.
2. Prepare Avocado Mash. Peel, pit and dice avocado. In a small bowl, combine avocado, cilantro, garlic, lime juice and salt. Whisk together with a fork to desired consistency and set aside.
3. Heat grill to medium-high. Place shrimp on soaked bamboo skewers and grill until cooked through (approximately 2-3 minutes per side). Remove shrimp from skewers, roughly chop and set aside.
4. Split English muffins with a fork and grill, split side down, until toasted (approximately 2 minutes).
5. Build sandwiches. Spread Avocado Mash on bottom English muffin halves. Top with chopped, cooked shrimp, diced mango and sweet peppers. Sprinkle with additional kosher salt and cilantro, if desired, top with toasted English muffin lids and enjoy!
