Poached Egg & Pesto Power Sandwich

Ingredients

1 Thomas’® Everything Bagel
1 egg
2-3 tablespoons white vinegar
2 tablespoons pesto
¼ cup baby spinach
3-4 slices avocado
Salt and pepper, to taste

Directions

1. Fill a medium sized pot with water and add white vinegar. Bring to a boil, then reduce heat to a gentle simmer. Crack the egg into a small bowl or ramekin so that it is easier to pour gently into the pot. Use a spoon to create a whirlpool in the pot, and gently pour in the egg. Continue to gently stir and let the egg cook for about 3 minutes (for a runny yolk). Remove the egg with a slotted spoon and drain on a paper towel.
2. Lightly toast the bagel. Layer on pesto, spinach, avocado and poached egg. Sprinkle with salt and pepper and top with toasted bagel top.
