Ingredients

1 Thomas’® Original English Muffin, toasted
¼ cup arugula, chopped
2 tablespoons pistachios, crushed
2 tablespoons pesto (recipe follows)

Pesto Ingredients:
1 cup basil
1 teaspoon garlic, minced
¼ cup grated Parmesan cheese
2 tablespoons olive oil
1 tablespoon pistachios, chopped
¼ cup spinach or parsley

Directions

1. Make pesto. Combine all pesto ingredients in food processor and pulse until smooth.
2. Spread pesto on toasted English muffin halves. Layer on arugula and pistachios.
