Ingredients

1 Thomas’® Everything Bagel, toasted
2 tablespoons olive oil
1 yellow onion, sliced thin
1 cup baby spinach
1 egg
2 slices Cheddar cheese
½ pear, cored and sliced

Directions

1. Add oil and onion to a large skillet over medium-high heat. Cook, stirring often, until caramelized (approximately 30-35 minutes). Transfer onions to a small bowl and set aside.
2. Add spinach to skillet and cook over medium heat until wilted. Transfer spinach to small bowl and set aside.
3. Crack egg in skillet and cook until whites are cooked through and yolk is set.
4. Set oven to broil. Place bagel halves on a baking sheet and top each with 1 cheese slice. Cook until cheese is melted (approximately 2 minutes). Remove from broiler and layer bottom bagel half with pear slices, onions, spinach and egg. Top with bagel top, cheese side down.
