Panzanella with Red Wine Vinaigrette
Toasted English muffins and garden fresh veggies make for one unforgettable salad.
4 Thomas’® Original English Muffins, torn
1 red bell pepper, large, diced
1 yellow bell pepper, large, diced
2 large tomatoes, diced
1 English cucumber, large, diced
1 cup packed fresh basil, torn
1/2 sweet red onion, julienne
Capers to taste, drained
Salt and pepper
Red Wine Vinaigrette
1/2 cup red wine vinegar
1/2 cup good olive oil
1 tablespoon Dijon mustard
2 cloves garlic, minced
1/2 shallot, minced
Juice of 1 lemon
Salt and fresh pepper to taste
2. Make the vinaigrette first by combining all ingredients and mixing well.
3. In a bowl, add all remaining ingredients then drizzle with vinaigrette and season to taste.
