Mexican Breakfast Bagel Casserole

Ingredients

4 Thomas’® Plain Bagels, chopped into quarters
1 lb breakfast sausage
10 oz canned diced tomatoes with chilies
8 eggs
1 cup whole milk
1 tsp salt
1 tsp pepper
1 cup shredded pepper jack cheese
2 tbsp chopped cilantro

Directions

Chop Thomas’ Bagels into bite-sized pieces then sprinkle them evenly into a 9x13 baking dish and set aside. In a skillet, brown the sausage over medium heat breaking it up as you go. Once cooked, drain the grease and pour sausage over bagel pieces then add canned tomatoes and chilies. In a medium bowl, thoroughly whisk eggs, milk, salt and pepper. Pour evenly into the baking dish. Top with shredded cheese. Cover dish with foil and place in the refrigerator for 2 hours or overnight. When ready, preheat oven to 350° and bake for 30 minutes. Remove foil and bake for an additional 10 minutes. Finish with chopped cilantro.
