Luck O' the Irish Breakfast Sandwich

Get any day off to a lucky start with this simple and satisfying breakfast sandwich.

Ingredients

2 Thomas’® Original English Muffins, toasted
1 tablespoon butter
2 eggs, scrambled
1 green bell pepper

Directions

1. Melt butter in a small skillet over medium heat. Scramble eggs in butter to desired doneness. Top toasted English muffin bottoms with eggs.
2. Slice bell pepper into rings. Rings sliced closer to the bottom of the pepper will most closely resemble shamrock shape. Place 1 ring atop each egg-topped muffin. Create a stem by trimming 2½-inch pieces of pepper from the extra rings and positioning them near the bottom of each pepper shamrock. Enjoy!
