Kale & Egg English Muffin Sandwich
Here’s a delicious way to get your leafy greens
1 tablespoon white vinegar
½ tablespoon olive oil
2 pieces kale
1 tablespoon Feta cheese
2. Carefully crack egg into simmering water and cook for 2½ to 3 minutes.
3. Remove egg with a slotted spoon and rest on a plate. Split and toast English muffin until golden.
4. Heat olive oil in a small skillet over medium heat. Add kale and lightly sauté until slightly wilted.
5. Layer English muffin bottom with kale and Feta. Top with poached egg and enjoy.
