Italian Veggie Pizza Bagel
No one will mind eating their veggies when served up this yummy way.
1 Thomas’® Limited Edition Pizza Bagel
1 small eggplant, sliced in ¼-inch-thick rounds
1 small zucchini, sliced in ¼-inch-thick rounds
1-2 tablespoons olive oil
1 teaspoon salt
2 tablespoons pizza sauce
3-4 mushrooms, thinly sliced
2 ounces Mozzarella cheese, sliced
⅛ small red onion, thinly sliced
2 teaspoons fresh oregano, minced
Preheat broiler. Arrange eggplant and zucchini slices in 1 layer on a foil-lined baking sheet. Lightly brush both sides with oil and season with salt. Broil 2-3 inches from heat until golden brown and tender (approximately 3-5 minutes on each side). Split bagel in half and place split-side-up atop baking sheet. Spread 1 tablespoon pizza sauce on each bagel half. Top each half with alternating slices of roasted zucchini and eggplant, followed by mushrooms, Mozzarella and onion. Cook bagel halves in toaster oven at medium heat for 10-12 minutes, or until cheese is melted and onions are slightly browned. Garnish with minced oregano and enjoy.
