Ingredients

1 Thomas’® 100% Whole Wheat English Muffin
1 avocado, sliced
¼ cup Goat cheese, crumbled
1 egg, fried
1 can refried beans
3 tablespoons salsa
1 lime
Salt and pepper

Directions

1. In a small mixing bowl, mash avocado with a fork. Add in the juice of ½ a lime and a pinch of salt. Set aside.
2. Put beans in a microwave-safe bowl and heat for 30 seconds. Stir and set aside.
3. Toast muffin and set aside.
4. In a skillet on medium-low heat, fry egg. While your egg is cooking, spoon desired amount of refried beans onto bottom half of muffin. Top with fried egg, salsa, Goat cheese and guacamole mixture.
5. Place remaining muffin on top and serve immediately.
