Ingredients

5-6 Thomas’® Plain Bagels
1 tablespoon butter
12 eggs
2 tablespoons chives
½ cup green peppers, diced
½ cup red peppers. diced
1 cup thick-cut ham, diced
1 cup Monterey Jack cheese
1 teaspoon oregano
1 teaspoon parsley
Salt & pepper, to taste

Directions

1. Preheat oven to 350ºF. Grease 10x10-inch casserole dish with butter. Cube bagels and spread in dish, then set aside.
2. In a large bowl, whisk together eggs, chives, peppers, ham, cheese, oregano, parsley, salt and pepper. Pour mixture over bagel cubes.
3. Bake for 40 minutes under foil. Remove and sprinkle any additional desired cheese over top. 4. Cover with foil and cook until golden brown (approximately 5 minutes).
