Grilled Salmon & Cream Cheese English Muffin

Ingredients

2 Thomas’® Original English Muffins, split
1 lb salmon
1 tsp sea salt
1 tsp pepper
½ lemon
1 tbsp fresh or dried rosemary
1 tbsp honey
4 tbsp cream cheese

Directions

Preheat grill on medium heat. Cut salmon into two even pieces and place each half on separate pieces of aluminum foil. Poke holes in salmon with a fork then squeeze lemon over both pieces. Sprinkle evenly with sea salt, pepper and rosemary and then drizzle with honey. Wrap foil around salmon. Grill for 3-4 minutes per side (depending on thickness). Carefully remove salmon from foil and grill for an additional 2-minutes per side. Meanwhile, split and toast Thomas’ English Muffins on the grill. Remove from heat, spread cream cheese on each half and top with grilled salmon.
