Ingredients

2 Thomas’® Original English Muffins, toasted
1 tablespoon extra virgin olive oil
½ cup chopped spinach
2 eggs
4 ounces thin-sliced ham
2 slices Swiss cheese

Directions

1. Heat oil in a medium skillet over medium heat. Scramble spinach and eggs together until eggs are cooked through.
2. Layer scrambled eggs with ham and cheese on each toasted muffin base.
