
Fried Egg Ragout Bagel
Slim, trim and simply delicious.

Ingredients
2 Thomas’ Plain Bagel Thins® Bagels
2 large eggs
½ lb kale, coarsely chopped
¼ cup sun-dried tomatoes
1 red onion, sliced
1 garlic clove, minced
11/2 tbsp extra virgin olive oil
Salt and pepper to taste
Directions
Heat olive oil in a saucepan over medium-high heat and cook garlic until soft. Raise heat to high and sauté kale, sun-dried tomatoes and sliced onions for 5 minutes. Cover and simmer, stirring often, about 5 more minutes. While this is cooking, fry up egg sunny-side up in a separate pan, and salt and pepper to taste. Place ragout on toasted Bagel Thins® Bagel and top with fried egg.
