These seasonally-inspired English muffins are big on fall flavor.

Avocado

Ingredients

2 Thomas’® Original English Muffins, split and toasted
1 slice bacon, crumbled
1 tablespoon butter
1 egg, scrambled
3 baby spinach leaves
1 tablespoon shredded Cheddar cheese
2 tablespoons Ricotta cheese
1 date, sliced
2 tablespoons Goat cheese
2 figs, sliced
2 teaspoons honey
⅓ avocado, mashed
1 teaspoon lemon juice
1 tablespoon pomegranate arils

Directions

1. In a large skillet on medium heat, cook bacon slice until crispy, about 5 minutes on both sides. Remove from heat and set-aside until cool enough to crumble. In same skillet, melt butter and scramble egg until fluffy.
2. Top 1 English muffin half with baby spinach leaves, scrambled egg and shredded Cheddar.
3. On second muffin half, spread Ricotta and top with crumbled bacon and sliced dates.
4. On third English muffin half, spread Goat cheese and top with sliced figs. Drizzle with honey.
5. In a small mixing bowl, mash avocado and lemon juice until some small avocado chunks remain. Spread avocado mixture on fourth muffin half and top with pomegranate arils.
