2 Thomas’® Original English Muffins, toasted
2 tablespoons cottage cheese
3 slices radish
¼ teaspoon dill
1 egg, scrambled
2 tablespoons Colby Jack cheese, shredded
¼ teaspoon chives, chopped
⅓ avocado, mashed
1 slice lox
1 slice red onion
2 tablespoons Goat cheese
2 slices pear
1 tablespoon honey

Directions

1. Spoon cottage cheese onto one toasted English muffin half. Top with thinly sliced radishes and dill.
2. Top second toasted English muffin half with scrambled egg, Colby Jack and chives.
3. Top third English muffin half with mashed avocado, lox and red onion.
4. Spread Goat cheese on remaining English muffin half and top with sliced pear and honey. Enjoy!
