English Muffin Bacon, Egg and Cheese Cups

Ingredients

6 Thomas’ Original English Muffins
4 tbsp butter, melted
1 cup cheddar cheese, shredded
12 slices of bacon
12 large eggs
¼ cup green onion
salt and pepper to taste
nonstick spray

Directions

Preheat oven to 375°. Generously coat a muffin tin with nonstick spray. In a skillet, cook bacon for 5 minutes on medium heat then place on a paper towel-lined plate. Split Thomas’ English Muffins and roll each half flat with a rolling pin until thin and flexible. Line muffin tin with English Muffins and brush them with butter. Sprinkle cheese in the bottom of each muffin then add one slice of bacon. Push all ingredients down and crack an egg into each muffin. Sprinkle with salt and pepper and bake for 20 minutes. Remove from oven and sprinkle with fresh chives. Remove English Muffins from tin while warm to prevent sticking.
