Ingredients

1 Thomas’® Everything Bagel Thins® bagel
⅓ avocado, sliced
2 mushrooms, sliced
2 egg whites
Spinach leaves, wilted
Olive oil

Directions

1. Sauté mushrooms with olive oil in small pan over medium heat. Transfer to small bowl and set aside.
2. Toast bagel thin.
3. Re-season skillet with olive oil and cook egg whites over medium heat until firm.
4. Lay egg whites on toasted bagel thin bottom.
5. Use same skillet to wilt spinach (approximately 30 seconds).
6. Layer spinach, mushrooms and sliced avocado on top of egg, followed by bagel thins top.
