1 Thomas’® Original English Muffin, toasted
½ tablespoon butter
1 egg
1 roasted pepper, sliced
¼ cup shredded Cheddar cheese
¼ cup arugula

Directions

1. Melt butter in a small skillet over medium heat. Whisk egg in small bowl, then pour into hot melted butter and gently scramble until cooked through.
2. Fold cooked egg and place on bottom half of English muffin. Top with sliced roasted pepper, cheese, arugula and English muffin top.
