Ingredients

2 Thomas’® Original English Muffins, toasted
2 tablespoons butter
½ cup yellow onion, chopped
1 tablespoon minced garlic
½ cup carrots, chopped
4 eggs
1 ½ cups potatoes, diced and boiled
1-1 ½ cups cooked corned beef, finely chopped
Salt and pepper, to taste

Directions

1. Melt butter in a large skillet over medium heat. Place onion in skillet and cook until translucent in color. Add garlic and carrots to skillet and cook until carrots are soft (approximately 3 minutes). Remove from heat and set aside.
2. Poach eggs by gently cracking into simmering hot water and cook until egg whites are set (approximately 4 minutes). Remove eggs with a slotted spoon and transfer to a paper towel-lined plate to drain.
3. Place potatoes and corned beef in large skillet and season with salt and pepper. Cook over medium heat until potatoes are crispy (approximately 20 minutes). Remove from heat and combine with onion and carrot mixture.
4. Place 1 spoonful of corned beef hash on top of English muffin halves, finish with a poached egg and enjoy!
