Cloud Egg Sandwich
This breakfast is light as a cloud, and twice as delicious!
4 large eggs
1 teaspoon salt
1 teaspoon black pepper
1/3 cup freshly grated Parmesan
4 slices Canadian bacon
3 tablespoons chives, chopped
Sriracha, to taste
2. Gently fold in Parmesan cheese. Arrange Canadian bacon slices on prepared baking sheet. Mound egg whites on top of each slice, making an indent in the mound centers with the back of a spoon to resemble nests. Bake until slightly golden (approximately 3 minutes).
3. Carefully add an egg yolk to the center of each egg white cloud. Season yolk with salt and pepper. Bake until the yolks are just set, about 3 minutes more. Toast English muffins. Remove egg clouds and bacon from oven. Place one on each English muffin half. Sprinkle with chives and drizzle with Sriracha.
