When your ordinary breakfast meets Cinnamon Swirl Bread, extraordinary flavors happen!

Ingredients

2 slices Thomas’® Cinnamon Swirl Bread, toasted
2 egg whites
1 teaspoon water
1 pinch salt
¼ cup spinach
2 tablespoons onion, chopped
2 teaspoons olive oil
1 tablespoon shredded Cheddar cheese
½ avocado, mashed

Directions

1. Combine egg whites, water and salt in a bowl, lightly whisk and set aside.
2. Place the spinach, onion and oil in a pan over medium heat. Cook for about 3-5 minutes, or until spinach wilts. Transfer mixture to a small bowl and set aside.
3. Return pan to heat. Pour egg mixture into pan and cook for about 5 minutes, or until eggs are set. Add spinach and onions to skillet. Fold egg mixture in half and sprinkle with cheese.
4. Layer mashed avocado on 1 toast slice. Top with egg mixture and second toast slice.
