Cinnamon Cream Cheese Muffin Casserole

Ingredients

6 Thomas’® Original English Muffins, cut into 1-inch cubes
1 (8 ounce) package cream cheese, cut into ½-inch cubes
6 eggs
1 ½ cup milk
½ cup heavy cream
¾ cup sugar
2 tbsp vanilla

Cinnamon Crumble:
½ cup flour
½ cup brown sugar
1 tsp cinnamon
¼ tsp salt
½ cup cold butter

Directions

Split Thomas’® Original English Muffins and cut into 1-inch cubes. Place half into a 9x13 baking dish. Sprinkle cream cheese on top of muffins then form a second layer of cubed muffins and cream cheese on top. In a medium bowl, whisk eggs, milk, heavy cream, sugar and vanilla until combined. Pour mixture over muffins and cream cheese. Refrigerate for at least 4 hours or overnight. Once chilled, preheat oven to 350°. Remove casserole from the fridge and set aside. For the cinnamon crumble, combine flour, brown sugar, cinnamon, salt and butter using a food processor. Process until thoroughly combined. Sprinkle crumble evenly over chilled casserole. Bake for 50-60 minutes or until the middle is set. Sprinkle with powdered sugar and cinnamon, if desired.
