Chipotle Elotes Breakfast Bagel Sandwich
This zesty snack is the perfect answer when hunger attacks.
4 tablespoons cream cheese
2 teaspoons chipotle in adobo sauce
2 tablespoons butter
2 ½ cups corn, cut from the cob
2 tablespoons mayonnaise
2 green onions, minced
1 handful fresh cilantro, chopped
1 tablespoon lime juice
Salt and pepper to taste
2 tablespoons Cotija cheese
2. Melt the butter in a large skillet over medium-high heat. Add corn and toss to coat. Let cook, undisturbed, until corn is charred (approximately 8 minutes). Stir and let cook, undisturbed, another 8-10 minutes. Remove from heat and transfer to a medium bowl.
3. To the corn add the mayo, green onion, cilantro, lime juice, salt and pepper.
4. Spread chipotle cream cheese on each toasted bagel half. Top with corn mixture and Cotija cheese.
