Breakfast Pizza Bagel
Say yes to fresh pizza for breakfast!
1 Thomas’® Limited Edition Pizza Bagel
2 tablespoons olive oil, plus more for drizzling
1 small onion, chopped
1 garlic clove, minced
½ teaspoon cumin
Salt and pepper, to taste
1 tablespoon tomato paste
1 (14½ ounce) can diced tomatoes
½ cup Mozzarella cheese
Handful chopped parsley
2 ounces Feta cheese, crumbled
1. Preheat oven to 375°F (If using pizza stone, place in oven while preheating). Heat olive oil in a small pot over medium heat. Add onion and cook until soft and translucent (approximately 5-7 minutes). Add the garlic, cumin, sugar, salt and pepper, and cook for 1 minute. Add the tomato paste and diced tomatoes to the pot and simmer for 15 minutes, stirring occasionally.
2. Split bagel in half. Top with tomato sauce and Mozzarella. Create a well on top of each bagel half and crack the eggs into them.
3. Carefully slide the pizza bagels onto the heated pizza stone. (If no pizza stone, place pizza bagels on a baking sheet). Bake for 15 minutes, or until the cheese is melted and the egg whites have set but the yolks are still runny. Sprinkle with parsley and Feta and enjoy!
