BBQ Pulled Pork Eggs Benedict
Make brunch extra delicious by adding BBQ pulled pork to a classic eggs Benedict!
1 cup pulled pork, cooked and shredded
½ cup BBQ sauce
¼ cup chives, chopped
Hollandaise sauce (recipe follows)
Hollandaise Sauce Ingredients:
3 egg yolks
2 teaspoons lemon juice
1 teaspoon salt
1 teaspoon pepper
1 teaspoon water
½ cup butter, melted
2. In a small bowl, mix pulled pork with BBQ sauce and set aside.
3. Make the Hollandaise Sauce. In a medium-size saucepan over low heat, whisk egg yolks, lemon juice, salt, pepper and water together. Slowly drizzle in melted butter while whisking continuously.
4. Layer each English muffin half with BBQ pulled pork, a poached egg and a drizzle of Hollandaise Sauce. Sprinkle with chives and enjoy!
