Ingredients
1 Thomas’® Original English Muffin
⅛ honeydew, cubed
⅛ cantaloupe, cubed
½ avocado, cubed
1 tablespoon Goat cheese
1 teaspoon balsamic vinegar
1 teaspoon olive oil
Cilantro, optional

Directions
1. Chop both melons and avocado and put ingredients into medium bowl.
2. Add vinegar, oil, and salt. Toss together. Place in fridge to keep chilled until later.
3. Toast English muffin until golden brown.
4. Spread Goat Cheese onto both halves. Layer on melon mixture. Garnish with cilantro.
