Bagel and Bacon Strata

Ingredients

4 Thomas’ Whole Wheat Bagels, chopped into quarters
8 eggs
½ cup red bell peppers, chopped
½ cup green bell peppers, chopped
½ cup cooked bacon, crumbled
½ cup whole milk
¼ cup green onion, diced
salt and pepper to taste

Directions

Preheat oven to 450°. Chop Thomas’ Whole Wheat Bagels into bite-sized pieces and place in a large bowl. In a skillet, cook bacon over medium heat until crisp and let rest on a paper towel-lined plate. Crumble bacon once cooled and put into the mixing bowl. Add in all remaining ingredients and mix thoroughly. Divide mixture evenly into 6 ramekin dishes. Place ramekins on a baking sheet and cook in the oven for about 15-20 minutes or until strata has puffed and browned.
