Ingredients

4 Thomas’® Original English Muffins, split
4 large eggs
4 slices bacon
2 medium avocados, mashed
½ cup fresh spinach leaves
½ cup sliced cucumber
salt and pepper to taste

Directions

Heat a large skillet on medium. Crack eggs into the pan and cook until preferred temperature. Heat a separate skillet on medium and cook bacon until crisp. Meanwhile, place avocados in a medium sized bowl and mash with a fork until it reaches your preferred consistency. Split and toast the Thomas’ English Muffin. Top it with the egg, bacon, smashed avocado, spinach leaves and cucumber.
